Low Carb Pizza Is Possible And Good! Loose Weight, Eat Great! For Diabetics Too!

Now, if you are my friend, then you should already know by reading many of my responses and discussions that I am on a low carb eating habit to prevent the onset of diabetes that I am already border line on. And with this change of eating habits, I am not allowed to have pizza because it has too many net carbs. So, my craving for pizza still took me to the freezer aisle looking at the South Beach pizza. It is a small personal pizza that had about 28 net carbs. And you know what? I hated it. It tasted horrible to me. But now I have a solution!!!! :) Low carb/Carb control tortillas! They have 10 net carbs per shell. Lightly butter the bottom and place on hot skillet. Spread about 2 Tbls of no sugar added pizza sauce (2 carbs) Add your pepperoni if you like (0 carbs) Cheese (if you like a lot of cheese 2 carbs) Once the bottom is browned, slid onto a cookie sheet and put under a low broil until this nice golden color. Once out, brush edges with butter. Now, you have a much larger pizza for only 14 net carbs!!!!!!!!! And for those trying to loose weight by reducing your carbs, this is a very good cheat for you also. :) Anyone else have any neat low carb tricks? Care to try this?

Great idea I will give it to my mother. She loves pizza and she always wondered why it affected her sugar. When she asked the Doctor they told here it was the carbs. She has been diabetic for almost 10 years and did not know that. so now she will be happy if she is able to eat pizza again. Thank you for the discussion and the idea!! I'm going to check into this. I have been getting the lite pizza from Papa Murphy and it works, but this sounds even lower. I'm diabetic and control with diet. When I first was diagnosed I had a thing for M&M Peanuts and had to give them up. Now I learned to love low carb Hickory Smoked Beef Jerky that's one carb per serving of 1/4 bag. Much lower than other varieties. I'm still wondering about NET Carbs, what I learned from my diabetic classes was a carb is a carb and all that net carb stuff is all hype. What's your take? You are so creative! So glad you are aware of this condition and are working at improving your diet. Carbohydrate consiousness is good however remember that vegetables should not be restricted no matter if they are classified as carbohydrates. Have you thought of a whole grain pizza? I have always loved veggies, so eating veggies has never been a problem. :) I have seen different types of low carb things and kits. But they always seem to be more expensive and they are not to my liking on taste. LOL So, I am having to find ways to get around this. ha ha I love bread, toast, pastas and am just a plain carb-o-holic. ha ha Hence, I need to find substitutes. :) I can even use the Carb Control tortillas as toast. I brush a little bit of butter, toss it under the broiler to brown, then put a little bit more butter on it like toast. It is actually a great sustitute for toast if you cut it up! :) [brokentia]


My mother-in-law recently told me that I need to start working out! Which is true, so I think that one of my first obstacles, besides getting off the couch, is eating healthier and this sounds like a great way to start. I'm a joke food junkie and if I can keep pizza in the diet I'll do much better! [imadriscoll]

I too am on a low carb lifestyle, I would just eat the topping off the pizza, when my family ordered one, I have used the low carb tortilla (some you can find as low as 4 net carbs,by the way) for other thing,never thought about pizza. Great idea,I'll try it one day. [goofygrmp]
i created a new thing to make when your craving pancakes, or rather the buttery syrup. Take those low carb tortillas we talked about,put a pad of butter and some sugar free syrup on top, microwave for 20 sec.. Yum ! Cuts that pancake craving and tastes pretty good too. [goofygrmp]

Thank you for sharing this. There is a pizzeria around where I live which is called "Pizza Lean" and it's great. Only whole wheat dough is made, with low fat and low cholesterol cheese, little bit of olive oil and the pepperoni is made of turkey and the bacon is made of chicken. Much healthier than most pizzas around. [mbs730]
I used the turkey pepperoni too. It tastes great and the same. Just minus the grease. :) Which makes it much nicer for my belly to handle. [brokentia]


I never thought there exists a low carbohydate pizza. But what happened to the crust of the pizza? Everyone knows they are made of dough, which is carbohydrate. yes this type of pizza is rally good as it gives us taste and also we have tension of suffering from diabetes. Its a great thing who want to be healthy and also free from diabetics. My parent sare alsoprefering this pizza because is future they would stay healthy. [safiuddin]

Pizza is sacred when I was on Atkins i ate pizza anyway, He use to say just eat the toppings i ate it all and still went from qn 18 to a 10 [cowlady]

I ate verything except carrots, bananas, rice pasta and potatoes and everything else i tried to get in sugarfree. there are alot more sugarfree choices now then there were when i did the low carb thing. i guess i did a combo of atkins and suzanne sommers. [cowlady]

Crust: 1 1/2 cups soy flour 3 eggs 3/4 cup heavy cream 1/3 cup club soda 1 teaspoon salt Sauce: 1 tablespoon olive oil 1/8 cup diced red onion 1 teaspoon chopped garlic 3 large Roma tomatoes, diced 8 ounces no sugar added tomato sauce 1/4 teaspoon garlic powder 1/2 teaspoon dried basil 1/2 teaspoon dried oregano (may substitute Italian seasoning for dried herbs) 1/8 teaspoon salt 1/8 teaspoon freshly ground black pepper Toppings: 24 ounces shredded mozzarella cheese 8 ounces pepperoni slices 1/2 cup crumbled Italian sausage, cooked 1/2 cup diced Parma ham 1/3 cup julienned red bell peppers 1/3 cup julienned green bell peppers 1/3 cup julienned red onion 2 portobello mushroom caps, sliced 2 tablespoons extra-virgin olive oil Pinch dried oregano Preheat oven to 375 degrees F. Make the crust: Generously spray 2 (12-inch) pizza pans with nonstick vegetable oil cooking spray. In a medium bowl, stir together all of the crust ingredients to make a smooth, thick, pancake-like batter. Using a rubber spatula, spread the batter as thin and evenly as possible over the 2 pans. Place pizza crusts on center racks of the oven and bake for about 12 to 15 minutes, or until lightly golden brown and firm to touch. Remove crusts from oven and increase the oven temperature to 400 degrees F. Meanwhile, make the sauce: In a saucepan over medium heat, heat olive oil and then sweat onions and garlic in oil, cooking just until softened and translucent. Add diced tomatoes and the remaining ingredients and simmer for about 2 minutes. Compile the pizzas: Spread the tomato sauce and then the mozzarella cheese evenly over both crusts. Top 1 pizza with pepperoni, sausage, and ham, and top the other with the bell pepper strips, onions, and mushrooms. Lightly sprinkle 1 tablespoon olive oil over each pizza, and sprinkle each with a dash of dried oregano. Place the pizzas back in the oven to bake for another 10 to 12 minutes, or until the cheese melts and starts to brown. Cut each pizza into 8 slices. [detrimentaldude]
Your recipe is not low carb. It still involves too many carbs. Soy flour has 24 net carbs for every cup used. So, for just the soy flour, that is 36 net carbs. Not including everything else you put into that. Please, next time contribute to the discussion instead of just posting a recipe because you thought it would pertain to the topic. It did not. If you get pizza or tortillas that are whole grain they are healthier for a diabetic because the grain has more fiber, which means the sugars are absorbed more slowly into the bloodstream. [Idlewild]
The Carb Control is whole wheat. :) But they also make white ones too for those that do not like the wheat. [brokentia]

Oh, that is awesome! I love pizza and am trying so hard to keep to low carb foods as well because my mother has diabetes and I suspect that I am suffering from symptoms of it as well. I am already am a diabetic but I still eat the regular foods but has cut my intake drastically. Eating once in a while wouldn't do harm i think ;D for as long as you keep watching your glucose levels. My situation is still manageable levels and has not gone really bad lately. I do dieting and light exercises as well and once in a while i do have a bite of something i used to love eating then after that i return back to my diet routine. I also keeping religiously my medications as much as possible. I guess since you on the borderline you only have to diet and exercise i guess you can prolong diabetes from conquering you. [rsa101]

I am definitely going to try this! I like the idea of browning the tortilla first so that it doesn't get soggy. I would add veggies to it, also. Low carb dieting has been the only way for me to lose weight and to keep it off. I used to think that Dr. Atkins was a nut case, but he really knew the physiology and what was going on metabolically. He was very radical, but the current trend of "lower carb" and choosing better carbs seems to be the healthiest way to go. [lauriefnp]
